Triolet
Wine
Mount Mary Triolet, first produced in 1987, is inspired by the white wines of Graves, Bordeaux. It is a blend of 75% Sauvignon Blanc, 20% Semillon and 5% Muscadelle, with minor variations between vintages.
Each variety is fermented separately. Grape solids are included during fermentation to provide the wine with texture, and the lees are stirred periodically to add complexity. The wine is fermented and aged in older barrels for 11 months.
Pale straw green, Mount Mary Triolet has a strong citrus backbone tasting of lime marmalade and lemongrass with firm acidity. Cellaring potential is five years.
